Mediterranean Quinoa Bowl / by Shelby Stewart

Healthy meal prep is hard, not to mention it takes forrrrever, so we came up with a healthy, make it all at once, recipe that can feed you for a week or four of you for a meal. It is packed with protein and fiber to keep your digestive system balanced and tons of antioxidants. Enjoy!  

Bowl Ingredients:

- 2-3 cups cooked Quinoa
(1 cup raw quinoa = ~3 cups cooked) 
- 1 whole pepper
- 1 cup grape tomatos
- 1 cup and a bit cucumber
- 1 whole avocado
- 1/4 black olives
- 2 sprigs oregano
- 6 large basil leaves
- 1 eggplant
- Micro greens to top it off!

Dressing Ingredients:

- 1 tbsp olive oil
- Juice  of 1/2 lemon
- 1/2 tsp himalayan sea salt

Shake all ingredients together until combined.

To Roast Eggplant:
Preheat oven to 400F. Line a baking sheet with parchment paper. Slice the eggplant and place on covered baking sheet. Sprinkle the eggplant with a little bit of coconut oil, lemon juice, salt and pepper. Bake for 8 mins each side. 

For the Bowl:
Chop the pepper, cucumber, tomatoes, olives and avocado. Combine the quinoa and the pepper, cucumber, tomatoes, olives and avocados in a large bowl. Mix in the dressing and serve with eggplant and micro greens!
